Kerala Shrimp Toast
Kerala has a ton of seafood selection. One of my favorite ways to use shrimp is by cooking shrimp on toast. Veggies can be added to the shrimp mixture as well. Make a paste of shrimp along with spices and aromatics and spread it onto bread of your choice and you can have a great snack or appetizer.
Ingredients:
For the shrimp paste:
2 cups Shrimp, peeled and cleaned
3 tbspn shallots, diced
1/2 jalapeno, deseeded and diced
1/2 cup cilantro, chopped fine
1/2 cup curry leaves, chopped fine
2 garlic cloves, chopped fine
2 inch ginger, peeled and diced fine
1 stalk scallion, chopped fine
1 egg
1-2 tbspn oat flour
1/2 tspsn ghee
Pinch of salt
1/2 cup white or black sesame seeds
slices of whole wheat bread
Method:
In a food processor, add all ingredients except the bread and the sesame seeds to a food processor starting with the shrimp. Once it breaks down add in egg and rest of the ingredients and mix well until combined. If the paste is too loose, add in more oats flour for spreadable consistency.
Spoon the paste onto each bread slice and flatten it even on each slice.
Place the sesame seeds on a plate. Place the shrimp paste side onto the sesame seeds so that it has one layer.
Add coconut oil in a saute pan, add in slices of bread with the sesame seeds down on the pan. Cook on medium heat until the shrimp is fully cooked. Toast the other side as well. Cut each slice into half and serve with garlicky ketchup and enjoy with a cup of tea or coffee!
