Snickerdoodle peach cobbler with Ghee

I love peaches in any form. Perfectly ripe peaches are a joy to eat. Super fresh and soft and it melts in your mouth. I love to bake a summer dessert with peaches. Here we have a snickerdoodle flavored peach cobbler. I use ghee in the dish as well as melted ghee while serving.

Ingredients:

For the peach filling:

  • 4 cups ripe peaches, cored & sliced

  • 1 cup coconut sugar

  • 1 tsp cinnamon

  • 1/2 tsp vanilla extract

  • Pinch of salt

  • 2 cups All purpose flour

  • 4 teaspoon baking powder

  • 1 cup of almond milk or 1 1/4 cup regular milk

  • 1 tbspn ghee

  • 1 tspn ghee melted for serving

Cinnamon-sugar topping:

  • 4 tbsp brown sugar crystals

  • 1/2 tsp cinnamon

  • 1 1/2 cups hot boiling water

Method:

  1. Preheat oven to 400°F. Lightly grease a 9x13” or similar baking dish with ghee.

  2. Make the peach filling & Assemble:
    In a large bowl, mix in all purpose flour, baking soda, cinnamon and salt. Keep aside. In another bowl mix well - almond milk, coconut sugar and vanilla essence. Mix the wet and the dry ingredients. Now add the sliced peaches to it and gently mix. Then pour into the baking dish.

  3. Topping:
    Mix the cinnamon-sugar topping and sprinkle over the top.

  4. Now add in the boiling water carefully on top.

  5. Bake for 40 minutes, until golden on top and bubbling underneath.

  6. Cool slightly before serving. Delicious warm cobbler with vanilla ice cream is a joy for summers! Add melted ghee on top and enjoy!
